Rich Tomato Soup With Pesto


Ingredients (Serves 4)

213 kcalories per serving
1 tablespoon butter or olive oil
2 garlic cloves, crushed
5 semi sundried tomatoes, roughly chopped
3 * 400g cans plum tomatoes
500ml vegetable stock
1 teaspoon sugar, to taste
142ml soured cream
125g Food Heaven Basil Pesto, Fresh Basil leaves to garnish if desired

Preparation Method

  1. Heat the butter or oil in a large pan, then add the garlic and soften for a few minutes over a low heat. Add the semi sundried tomatoes, canned tomatoes, stock, sugar and seasoning. Bring to a simmer. Simmer for 10 minutes until the tomatoes soften.
  2. Whizz with a stick blender, adding half of the soured cream, gradually. Taste and adjust the seasoning as desired.
  3. Serve in to warm bowls with 1 tablespoon of Food Heaven Basil Pesto swirled on top. Scatter basil leaves if desired.
